Changes to the Peru “Norte” roast profile

I felt that the coffee from the first production roast was very flavorful and balanced but was a little lacking in body. I decided to make changes to the profile that would bring up the body as well as reinforce the sweet notes. The lemony citrus notes were a little sharp in the finish, I was hoping to mute them a bit. I was looking for  a richer and heavier experience now that the dark days of fall are here.

The changes brought up the body considerably,  and revealed some sweet milk chocolate notes up front. We were very surprised at how the lemony citrus notes have changed to a beautiful soft finish dominated by sweet orange notes.
