Cupping Organic/Fair Trade Mexico “Chiapas” wp decaf this morning

Slight change in charge temp resulted in a big change in the aromatics during the roast. The slower development from a lower starting temp allowed the walnut like notes to be much more pronounced, or to survive and not be burned off.

Very nice results at the cupping table – light body nice walnut notes

In the Chemex – light body subtle cooked fruit notes, and the classic walnut finish.
