We have been testing the switch to an Organic for one of the origins in “Illuminator”.

After switching to another farm, and a couple of subtle profile changes to get the balance right – and retain the original flavor profile we were amazed at the result.

The top notes as well as the finish have gotten “all Churched up” with pineapple and orange notes, and the body has gotten heavier.

The result is that “Illuminator” is a much bigger and more complex espresso.

We are going to put the changes into production – and order more greens.
