Malabar is an aged coffee from India that is extremely low in acid and very mellow when roasted to medium dark and retains just a hint of the aged coffee funk that reads as malty notes on the palate with a very silky body.

Mexico Chiapas Turquesa gains momentum when roasted dark and becomes the very opposite of its light roasted well behaved and somewhat shy brother. Roasted medium dark it becomes a flavor bomb – not with bitter pointed flavor notes – but with up front round and deep roast notes that linger sweetly.
